Happiness lies in maintaining a healthy body and mental state, the basis of which starts with right eating.

This special recipe comes all the way from New Delhi India. It was given to me by Anna Guinn at the London Retreat. She told me how in New Delhi the late Sheikh of the order Hazrat Azad Rasool would ask for this dish to be made for his students.  This dish is made with natural ingredients and natural spices and includes world’s healthiest food ginger. Anna simply fell in love with this dish.  She said after the meditation and prayers everyone feasted on this dish and it gave everyone abundance of energy.

Many people who have had food at Delhi Khanaiqa خانگاه‎ are surprised by how delicious it can be given the limitations on number of ingredients that are used. One drink Khanaiqa n New Delhi is very famed for is its Indian tea. Drinking tea is seen as something akin to meditation, with tremendous calming effects.  The late Sheikh Azad Rasool would order the tea to be made and served to his beloved students who traveled from all across the world to learn character reformation and about God at his doorstep.

Khanaiqa خانگاه‎ is a gathering place of the Sufis, Sufi Students, travelers, learners and is a place for spiritual retreat.

I made this  Dish last Week and I was pleasantly  surprised by its distinct flavors and taste. This dish brings out the full flavor of the ingredients especially ginger, awakening both mind and body.

In India and Pakistan we really believe that Food served at mosques and khaniqahs carries lots of healing and blessings. Its frowned upon, if one refuses or declines food at such places. It’s argued by Buddhists that eating the right food is the best way to cure disease without taking medicine or getting other treatment.

Scrambled Spicy Eggs

Prep time: 5 mins    Cook time: 10 mins    Total time: 15 mins

Ingredients

  • 3 Eggs
  • 2 tablespoon oil
  • ¼ teaspoon cumin seeds
  • ¼ inch ginger, finely grated, about half a teaspoon
  • 2 stalks spring onions, finely chopped
  • 2 green chillies, chopped
  • ½ teaspoon salt
  • ½ teaspoon turmeric
  • ½ teaspoon pepper powder
  • 4 stalks coriander leaves, finely chopped

Directions-

1- Chop spring onions, green chillies and ginger (you only need 1/4 tsp ginger here) very finely. Set aside.
2- Heat oil in a pan and add in the finely chopped onions, ginger, green chillies and  and fry for 10 seconds.

3- Lower the heat and fry in medium flame for a couple of minutes until soft. Add in the  salt, pepper powder and turmeric. Saute for a minute more. Add in the eggs all at once.

4- Add in the coriander leaves. Stir to mix and scramble the eggs to the doneness you like. Grate some ginger and add on top. Remove off heat and serve.

Viola. Serve it with your choice of bread or Pakistani Chappati. Hey Pakistan has to come in somehow.
